Kimchi ( 김치 )



        Kimchi represents Korea's best known food. Koreans serve kimchi at almost every meal. It is because Kimchi is a Korean traditional food that found at first in 16th century.

Actually, Kimchi is  traditional fermented Korean dish made of vegetables with varied seasoningsKimchi have a lot of varieties, but the most general to make is Kimchi that made from baechu (napa cabbage/sawi putih), radish and cucumber as a main ingredient and for the seasonings, Koreans use onion, ginger, bombay  onion, red chili peppers, garlic, salt and aekjeot (fish sauce). 
At first the baechu, radish and cucumber must be marinated in salt water until 6 hours. After that, mix all with the seasonings and then take it all in a big jar to fermented. Fermentation process will be happen in few days (2 until 3 days)
Kimchi also known as food that very spicy because Koreans like spicy taste and in their opinion, Kimchi won’t delicious if it is not spicy.

Kimchi is made of various vegetables and contains a high concentration of dietary fiber, while being low in calories and it is rich in vitamin A, thiamine (B1), riboflavin (B2), calcium, and iron and contains a number of lactic acid bacteria, among those the typical species Lactobacillus kimchii.
 Health magazine named kimchi in its list of top five "World's Healthiest Foods" for being rich in vitamins, aiding digestion, and even possibly reducing cancer growth.
