The Sliced Beef Brisket - Chadolbaki
Chadolbaki ( 차돌박이 )
Chadolbaki is one of korean main dishes that popular at Korean restaurant and also as home's food. It is actually a grilled beef but it is different from the other grilled beef such as bulgogi. The differences is from the meat that used.
Chadolbaki is used brisket beef that sliced in very thin part. Those thin sliced make it not need to marinated in sauce before grilled. It just simply cooked on portable or built-in gas or charcoal grills. They used brisket part because this part is usually fattier than the other part.
Chadolbaki is more healty than the other grilled beef. It’s because the beef is sliced very thin so they doesn’t contain too much fat. And then the other profit is the beef can cooks very fast over open grills for quick bite after bites.
To eat chadolbaki we need to make the sauce. The sauce is made from sesame oil, salt, and pepper and it can eat together with shredded scallion salad (pa muchim). Pa muchim is made from scallions, sesame oil, rice vinegar, gochugaru (red chili pepper flakes), salt and green leaf lettuce. Pa muchim is also available for purchase but can be easily prepared at home.
And then for last touch, add lettuce, spinach, or other leafy vegetables. It can be used to wrap to all contents altogether along with a dab of dwenjang(soybean paste) or ssamjang(spicy paste used with food wrapped in a leaf in Korean cuisine).
