The Simple Recipe of Bibimbab
BIbimbab (비빔밥 )
Bibimbap is the most famous Korean dish. Bibimbap literally means mixed rice or mixed meal in Korean. It's a popular meal consisting of a bowl of steamed white rice topped with vegetables, beef, a whole egg, gochujang (red chili pepper paste) and sesame oil.. Gochujang is usually served separately to control its spiciness of this rice dish.
In Korea, Jeonju, Jinju, and Tongyeong are especially famous for their versions of bibimbap. It is listed at number 40 on World's 50 most delicious foods readers' poll compiled by CNN Go in 2011. It is quite healthy and delicious. It can be served either cold or hot.
Bibimbap is first mentioned in the Siuijeonseo, an anonymous cook book from the late 19th century. There its name is given as 부븸밥 (bubuimbap). Some scholars assert that bimbimbap originates from the traditional practice of mixing all the food offerings made at an ancestral rite (jesa) in a bowl before partaking in it. Since the late 20th century, bibimbap has become widespread in different countries, due to its convenience of preparation. It is also served on many airlines connecting to South Korea.
The city of Jeonju, the capital of the North Jeolla Province of South Korea, is famous throughout the nation for its version of bibimbap, said to be based on a royal court dish of the Joseon Dynasty. A further variation of bibimbap, called hoedeopbap uses a variety of raw seafood, such as tilapia, salmon, tuna or sometimes octopus but each bowl of rice usually contain one kind of meat. The term hoe in the word means raw fish. The dish is popular along the coasts of Korea where fish are abundant.
A variation of this dish, dolsot bibimbap (dolsot meaning stone pot) is served in a heated stone bowl, in which a raw egg is cooked against the sides of the bowl. The bowl is so hot that anything that touches it sizzles for minutes. Before the rice is placed in the bowl, the bottom of the bowl is coated with sesame oil; consequently, the portion of the rice touching the bowl becomes golden brown and crispy.
Vegetables commonly used in bibimbap include cucumber, zucchini, carrot, white radish, mushrooms, bellflower root, and laver. It may also contain spinach, soybean sprouts, and bracken fern stems. Tofu, either plain or sautéed, may also be included in the dish as well. Within both types of bibimbap, all ingredients are typically stirred together thoroughly before eating.
Ok ! now I’ll tell you the way to make that delicious bibimbab ^^
First, you need a carrot, zucchini, Shitake mushrooms, bean sprouts, beef, and spinach. Sesame oil will be used for cooking these vegetables. For carrots, you can use it fresh or cooked.. It is up to you ^^ . Then cook zucchinis. Use sesame oil also and just cook them for 1-2 minute until they're cooked. For spinach, you want to boil them for 30 minutes to soften them up and pan fry them for another 30 seconds. You can skip the pan frying part if you want to.
Second, boil the bean sprouts for 30 seconds as well and pan fry the bean sprouts with sesame oil for at least 30 seconds. For the mushroom, bibimbap ideally use Shitake mushroom but if you think it is too expensive, you can change it with another mushroom. Slice the mushroom and cook with sesame oil.
Third, the beef. You can use rib eye, loins, ribs, ground beef or steaks. Just make sure you slice them very thinly while it's still semi frozen. When fully defrosted, it will be hard to slice them thinly as it loses any strength of the tissues. Use sesame oil to cook the beef. Then add 2 table spoons of soy sauce. Stir it for a while. It will become similar to Bulgogi, but Bulgogi recipe is more complicated than just sesame oil and soy sauce.
Forth, you need to fry an egg. You can also use just the yolk for Bibimbap but if you do like eating the white part as well, you can make it.Cooked the egg sunny side up in medium heat because later the yolk will be an important part of the mixing.
After you done to fry egg, Put rice into a bowl and place the fried egg over the rice. Then pick out those vegetables that you stir fried earlier and throw them over the rice as well. You can put it all organized at bowl or just put it up to you ^^.
Then, you need to make a spicy dressing which you will use to mix the rice and the vegetables. It's spicy and sour dressing called "Yangyum Jang" in Korean. Use the red pepper paste, tea spoon of minced garlic, 2 table spoons of apple juice, tea spoon of sesame oil, Chinese hot mustard, and sesame seeds.
Finally, put the dressing on Bibimbap and sprinkle sesame seeds over as a garnish. Now you can enjoy it !! Don’t forget to mix it before you eat it ^^
